I was on a mission. I wanted to make a semi-healthy muffin. My current herbal cleanse doesn't allow me to eat dairy and white flour or sugar. Time to experiment. First of all let me say, baking is not something that has always been successful for me but today I have to say, I like what I created.
Pumpkin Cranberry Muffins
3/4 c. Flaxseed Meal
1 1/2 c. Whole Wheat Flour
3/4 c. Oat Bran Cereal (crushed to a powder)
1/2 c. Brown Sugar
2 tsp. Baking soda
1 tsp. Baking powder
1/2 tsp. Salt
2 tsp. Cinnamon
1/2 tsp. All Spice
1/2 tsp. Nutmeg
1/2 c. Dried Cranberries
2/3 c. Soy Milk
2 eggs beaten
1 tsp. vanilla
1 can (15 oz) Pumpkin
2 tsp. Honey
Mix Dry ingredients and Wet ingredients in different bowls. Mix together and drop into muffin cups greased muffin cups or papers. I used a baking muffin stone so no papers or greasing needed. Cook 15-20 min. at 350 degrees.
I have to say they are pretty simple, yummy and nice to look at.
